Over the years, Andrew partnered with iconic hospitality brands like Momofuku (FUKU), GENJIGO, Hill Country Hospitality, Num Pang Sandwich Shop, and Hillstone Restaurant Group. He oversaw dozens of restaurant openings across the country, launched commissary and delivery operations, revamped operational manuals, and built high-performance corporate teams. His work consistently delivered results—with first-year revenues ranging from $2M to $12M.
But the defining moment came during the COVID-19 pandemic. While others pulled back, Andrew leaned in—successfully opening and revitalizing locations when the industry needed resilience most. That experience crystallized a critical insight: the restaurants that survived and thrived weren't just the ones with the best food or deepest pockets. They were the ones with operational excellence, adaptable systems, and leadership that could navigate uncertainty.
Andrew founded Flipping Aces because he saw a persistent gap in the market. Independent operators and growing brands needed access to the same level of strategic expertise that major restaurant groups enjoy—but without the overhead of a full-time executive team.
